What's for Dinner, Sun., Sept. 17, 2023

First up is chicken liver spread on club crackers with red onion slivers. Green olives stuffed with blue cheese.

Then eggplant almond enchiladas, one of my favorite Mollie Katzen recipes. Has green pepper, onion, garlic, cubed eggplant. I've been making this recipe for decades!

Pineapple peach kombucha.

Dessert: figs and mascarpone. Decaf iced coffee.

Unless you fish - all the perch I've seen in the Buffalo area was frozen.

End of the summer barbecue for our neighbors in the mountains.

Appetizer
Red, green and yellow peppers marinated in Italian dressing then grilled with Vidalia onion slices.

Salad
Red leaf lettuce with heirloom tomatoes, black olives, cucumber slices and almond slivers topped with more Italian dressing.

Entree
Beef medallions with grilled mushrooms. Grilled potato wedges.

Dessert
Watermelon.

Beverages
Sodas, iced tea, beer, wine, liquors & mixers, coffee and water.
