Making soup with split yellow peas

They look like lentils and don’t need soaking, according to the bag.

I went to the food bank today and they were overflowing with produce and generosity. Using the items they gave me, along with some spices and wine from my cabinet, this is what I’ve got cooking:

Leeks
Onion
Garlic
A little hot chile pepper (glad I tasted it before dumping in the pot! Yi! Spicy!)
Mushrooms
Diced heirloom tomatoes
Splash white wine (all that was left in the bottle)
salt, pepper, thyme, curry powder, bay leaf
yellow split peas
sweet corn cut off the cob
V8 and water
chopped some Kale and Swiss Chard to add towards the end

It smells divine, have about 20 min till I need to add the greens.
Will report back.

Whenever I make split pea soup, I go heavy on the onion and garlic. They balance out the natural sweetness of peas and give it a nice savory flavor. Just a personal preference.

Gotta keep the vampires away!

Tried to balance the onions and leek, we’ll see if I used enough.
There is also some fresh basil which I may snip a little of as a topper? It might be too much, though.

A little fresh basil on top and a pinch more salt is perfect. Wish I would have used that third ear of corn, but that’s ok. The spicy factor is just right. Had the sriracha on stand by, just in case, but don’t need it.



I’m going to freeze half and enjoy the heck out of the other half the next couple days.
So grateful for the help and a delicious dinner.

Almost every day. Mine isn't as robust as yours and freezing it is key. I use Mason jars. Well done, happybird! ❤️

I love lentils, too, but haven’t been cooking for myself much lately because I ate at work all the time.

Was thinking about a delicious potato and lentil salad recipe I used to make and dug it up if you are interested. It’s so easy and yummy, it was one of my standard “going to a bbq, gotta bring something” dishes (that, and sesame green beans were always a big hit):

3/4C dried green lentils
1 tsp salt
2 3/4 C. cold water
4 small to medium potatoes
3/4C finely chopped onion
3 cloves minced garlic
1/4C chopped, fresh herbs (parsley, basil, tarragon)
3TB minced scallions
1/4C EVOO
2TB red wine vinegar
1/2 tsp pepper

Boil lentils with 1/4 tsp of salt, till tender, about 45 min

Boil potatoes till tender, then cut into medium width slices

Gently combine potatoes and lentils in a bowl

Add everything else and toss gently

You toss it while warm and it’s great eaten at room temperature.

Summer, winter, it doesn’t matter
(but won’t eat cold soup like gazpacho or vichyssoises. Ick!)

I wasn’t sure how this one would turn out and was very pleasantly surprised. Good luck!
