What's for Dinner, Fri., Aug. 4, 2023

Cold Mediterranean platter. It has turmeric roasted cauliflower and quinoa salad with parsley and lemon. Olives, hummus, and pita wedges. A little prosciutto and various cheeses--halloumi, goat cheese, blue cheese.

Mixed berry kombucha.

Dessert: cantalope, iced Earl Grey tea.

So cottage cheese, orange pepper strips, swiss cheese, and a hard boiled egg.

I need to wash out the fridge part this weekend.

The self-pay barn near the campground has eggplant, green peppers, onions, zucchini galore at very good prices.
Tomatoes are still high and judging from my own plants, I am surprised they had any nice tomatoes. I don't know if it is the multiple flooding storms, the Canadian smoke, or the lower temps, but I had to supplement the ratatouille with canned, no sodium tomatoes. Luckily I had fresh basil, rosemary, and oregano.
Seeded bread and parmesan cheese along with the stew. Watermelon for dessert.

salsa ... (tomato plants really producing )
4 of em and I'm getting 3 or 4 per plant

Grilled with just salt, pepper & granulated garlic.
Shallots & mushrooms sautéed then, butter & white wine.
Made a sweet potato puree & steamed asparagus with some lemon.
Did my best to present it like fine dining. My wife approved.

The Landlady is taking me to the Wayne Hotel in Honesdale, PA for a surf ‘n’ turf dinner.

Lobster and filet mignon. Green beans and mashed potatoes. Pinot noir.

Chocolate brownies for dessert.

Romaine, Arugula, Endive, Radicchio, Vidalia Onion, shredded Mozzarella, and . . . . . cut-up, crispy fried Shrimp. Served with a light Dijon Vinaigrette with a little extra oregano.

Mission accomplished.

Whatever we eat tomorrow has to include sweet potatoes. The farm box has delivered them twice, so we have a bunch.
