What's for Dinner, Mon., Apr. 17, 2023

Cup of roasted tomato/red pepper soup. Garlic parmesan croutons.

Was craving tuna fish salad, so I made up a bowl with yellowfin,celery, onion, scallion, and egg. Brioche roll. Over the top, toasted pepitas, slivered almonds, sesame seeds, and walnuts. On top of that, chopped romaine and tomato.

Chips.

Peach mango kombucha.

No dessert in the house, boo hoo.

Salad of Boston Bibb lettuce, cherry tomato halves, sliced red onion and sliced pimento-stuffed olives with a Balsamic dressing. Crumbled Roquefort cheese on top.

Grilled NY strip steak, medium rare with vegetable kabobs of green & red peppers, mushrooms and onions.

Rocky Road ice cream for dessert.

I sauteed sweet onion, garlic, red yellow and orange pepper, green beans, crimini and oyster mushrooms. I cooked a nice wild rice blend I mixed with the veggies.

I baked some bourbon salmon fillets. I have enough for 2+ meals, so tomorrow I'll have the same. I love leftovers! For dessert I have some cookies a friend made.

Your dinner sounds yummy. I was craving tuna yesterday, which I had for lunch with a salad.

Today for LilBit and i, this meal was planned. Because it would be cool here. And I could start the oven.
Roasted whole chicken, garlic and basil. The worst part is smelling the aromas while it cooks.( slow) LilBit off the rails. (So was I) I’m not sure I can reply to your post about chicken salad and soup in a day or 2. She just eating.

and that's the last of the Easter lamb! Unless you count the two packages of sag gosht and the package of lamb ragu in the freezer. I made taramasalata, since the small grocery where I usually can find ready-made only had the roe today. Sort of like making a fish-flavored, very salty mayonnaise.

I've had then in the UK, and I liked them, but being in California we tend to get things like Pacific salmon, sand dabs, and (in a good season) Dungeness crabs
