What's for Dinner, Tues., Jan. 24, 2023

Posting early due to working late.

I made a big salad with romaine, baby arugula, and red tip lettuce. Lots of peppers, chopped salami, olives, and artichoke hearts. Manchego and gorgonzola. Red onion.

On top of that, I made my own creamy Italian garlic salad dressing. I made it using Fage, which I think is a better sour cream. It turned out so outrageously good that I used it for a dip with some pita chips and consumed an entire three ounces, I'm embarrassed to say.

I may make an additional dish later on, when I get back from my "field trip," which is to a big Chinese grocery market about 8 miles away. My idea is to buy different types of Chinese greens that I've never tried and cook with them. Because these types of greens and vegetables grow well in cold weather, I figure I can get started planting them soon because we are having a very moderate winter. Also I have greenhouses and cold frames to get them started.

I want to try new greens and veggies, but I don't want to grow them unless I like them, thus this excursion.

As a guide, I am using this book by Jenn Louis called The Book of Greens.

TJ is cooking, I saw potatoes and celery. Likely there are onions and carrots too. Don't know the cut of beef, it might be a London Broil.

Edit: It was a sirloin tip roast from the little store butcher. It turned out tasty and fall apart tender.

I have a mushroom souffle in the oven, made some fresh hashbrowns, and some frozen asparagus with fresh mushrooms and onions. The kitchen is a mess, but I'll eat good

we did our weekly run into town this morning. So far nothing but rain off and on. But the weekly run means easy dinner night.

I ate a bunch of nuts earlier, so I'm not eating. Fixing husband freezer dinner: beer battered fish fillets, onion rings, hush puppies and the last of the leftover slaw. Tartar sauce and malt vinegar.

At one of the stops today, I was able to find a couple more of the Guiness Chocolate Stout cakes. He loves them, me not so much. But I also found some Bailey's Irish Cream cakes, which I will try a piece of later.

in the kitchen but I was searching for easy meals to make with one hand last night 😄 maybe it will be a good excuse to teach the kiddo more about cooking.

They're pre-marinated, but off the top of my head I don't know what the marinade is (the package tells, but I don't have it in front of me). They came from the food bank.

Mac & cheese

steamed carrots



Razzleberry pie for dessert (scoop of vanilla ice cream on top)



Dad had strip steak w/ onions, mashed potatoes & gravy, green beans. I took a piece of pie to him as well.

It is beautiful! And very much a comfort food, too.

The pics at the link are also good. You wouldn't think it would be easy by looking at it, but it seems to be a fairly easy dish to turn out.
