What's for Dinner, Sun., Jan. 15, 2023

I had a late lunch of my Swedish meatballs so I might skip dinner.

However, if I do make something it will be matzoh ball soup and a spinach/romaine salad with red peppers, cherry tomato, red onion.

Boneless pork ribeye chops, double dredged in flour, grated parm, Lawry's, garlic and pepper, and egg, then fried in the cast iron skillet. Going to make mashed potatoes with sour cream, grated parm and garlic. Cole slaw with homemade dressing has been made and is in the fridge.

Usual water (both) and coffee (him).

The guys were all here today.

We had fajitas, (chicken and steak), Spanish rice, refried beans, mini corn muffins, and cold beer

Coffee, cookies, and Oreo ice cream for dessert

I have homemade pasta e fagiole in the fridge if anyone gets hungry later.

We were gifted a couple of filet mignons from a restaurateur friend and it's warm enough in the Catskills for me to grill them. Otherwise, I'll pan-fry them. I think I'll make a Bearnaise sauce from scratch 'cause it's tastier!

Mashed garlic potatoes and asparagus. If I grill the filets, I'll grill the asparagus or else I'll steam the spears.

Dark chocolate and the season finale of The Hunters for dessert.

Tomorrow we're heading back to Charleston, SC to resume our sailing trip to the Bahamas. We've got lots of meals planned aboard the boat but tonight is going to be special!

I have the slow cooker going with a carrot/sweet potato/red lentil soup in it. I also have some leftover slow-cooked beef ribs and polenta from last night. So maybe one, maybe both. They're both good for a cold, rainy night.

Haven’t decided on spices yet. Maybe curry powder on the chix and a little light tomato sauce made on the stove? Jasmine rice and garlicky green beans, for sure.

For dessert: Shortbread made by my Mom and a some hot tea.

How do you make them? I meant to ask yesterday but forgot. Mom used to make potato pancakes for dinner every once in a blue moon and I loved those.

some amazing beef-based dressing my wife had made and froze awhile ago and half a roma tomato with parmesan cheese on top that baked next to the brussell sprouts. Lemonade made with fresh-squeezed lemons. French vanilla ice cream drizzled with Ghirardelli chocolate syrup for desert.
