I COOKED! Just put lid on 'my' own recipe for beef stew!!! 'Invented' it years ago, when my currently 37 year old daughter was about 2, and she perched beside me on counter between sink and stove, and I 'played,' dredged 'stew beef' cubes in flour with salt, pepper, THYME, and garlic powder, browned beef, covered meat with cubed red potatoes, added cans of peas'n'carrots, jar of pearl onions (with all liquids,) 2 cans stewed tomatoes which I rinsed with red wine (used Chianti just now,) and bay leaves.
Simmering now until pots are edible.
Will see, and may bring leftovers to daughter's house tomorrow, so her family can know something about what we used to eat! (I haven't made this in MANY years, being mostly 'home alone.')

(7,184 posts)It's my own "recipe" (although I pretty much wing it every time). Add olive oil and water to a soup pot and sauté a large chopped onion or two small ones, a chopped bell pepper, and a few cloves of minced garlic until softened. Add can of diced tomatoes (liquid too) and three or four cans of rinsed and drained beans of your choice. You can do all black beans or some sort of combo, like black beans, white beans, and garbanzos or pinto beans, etc. -- it's a good way to use up opened cans of stuff. It's important to discard the liquid from the can and not include it in the soup because, lemme tell ya, your digestive system will make a stink about it later, ha ha. Cover with vegetable broth. Add in a good portion of chopped cilantro to taste, as well as a dollop or two of red salsa and a dollop or two of green salsa, also to taste. Mix and simmer to allow it to heat through and blend flavors. Thin with more broth if needed. Add salt (and garlic powder or more chopped garlic if wanted) to taste, as well as a squeeze of lime and/or lime zest. Before serving, sprinkle cheese of your choice on top (cotija, cheddar, etc.) I'm vegan and like to put Follow Your Heart feta crumbles in mine.

(14,176 posts)I made some Dal Makhani the other day and I have leftovers, so maybe I'll heat that up with some basmati tonight. It's cool and rainy in LA, so it's perfect weather for it.

A few "ghost" cookies with some Earl Grey.

(36,281 posts)...or leftover black-eyed peas with ham and cornbread. The leftovers will still be left over tomorrow, and I'm getting a taste for noodles. Regardless, I'll probably make a quick green salad to accompany it.

(22,767 posts)Made tapioca pudding today. It was easy and delicious. Just had a hard time standing and stirring, waiting for it to thicken, without my back really hurting. But it was worth it.

(17,055 posts)In and out today, so something quick. I baked bread yesterday and had enough dough to make a loaf and 2 English muffins. I made bulk sausage last month and froze as patties. I fried one of those, and cut up some radishes, celery and baby carrots to go with. Not sure if I'll eat anything else, we'll see. It feels late to have anything sweet.

(17,500 posts)TJ is cooking chicken livers and I have an aversion to them. My aversion relates to a job where I needed to occasionally go to chicken processing plants and get those livers on the line.
Maybe I'll make a ham and cheese sandwich on rye with sides of fruit, but I'll need to wait until she clears out of the kitchen. Yuck!

(9,275 posts)Over my daughters objections (I am not allowed to deviate from the normal Thanksgiving menu) I am making potato filling instead of filling balls this year. Its a Pennsylvania Dutch thing. Trial batch of potato filling in oven, with shake-n-bake chicken legs and corn. I dont stuff the turkey, food safety.
