I made cannellini soup with prosciutto cubes. No recipe, but who needs a recipe for soup, right?
I put in chopped carrots, lotsa' garlic, onion, chicken bone broth from a jar, plus some chicken broth from the freezer. In addition, thyme leaves and then after the soup is heated up, a dollop of basil pesto. Maybe some grated Parmesan on top, too.
Pretzel thins with Cheddar-pimiento cheese spread.
Maybe half an apple with Earl Grey for dessert.
Were anchored off the Piankatank River in southern Virginia. We went ashore for provisions and gear. The seafood store had too many goodies but we settled on frozen soft-shelled crabs, a half dozen shrimp and freshly caught tuna. Beautiful stuff and extremely reasonably priced.
Small shrimp cocktails then soy sauce marinated tuna seared black and blue. White rice and cherry tomatoes on the side. Chocolate chip cookies and tea with a movie for dessert.
The crabs went into the freezer for later.

(22,767 posts)First I made white chicken chili bc of NJCher. Used this recipe bc husband wanted a creamy soup rather than just a brothy one and it had hundreds of excellent ratings:

I had originally intended to just make a brothy soup, so I didn't make the original recipe I had ordered groceries based on. This one called for 2 - 4oz cans of chopped chilis, which the other didn't. Since I didn't get those, and the site said she uses 1 can of mild and 1 hot, I just diced the pickled jalapeño slices I already have, but used half the recommended amount in the recipe. Still came out pretty spicy and more cloudy, rather than creamy and at all thickened.
Additionally, even tho I softened the cream cheese well, it still took a long time for it to completely break up, so if you make this and want to serve it in a shorter amount of time, I recommend following the note she added about softening the cream cheese and then beating it with some of the soup to temper and completely smooth it out into more of a sauce before adding to the soup. (I didn't bc it's worded as more of a suggestion.)
Served with tortilla chips and a couple wedges of fresh lime. I would also suggest adding a dollop of sour cream to each serving and stirring it in to take some of the bite out of the peppers.
I didn't get a photo before husband took his bowl. Sorry. He likes it even tho a tad spicier than he's used to.
But I did get one of the cranberry bread I baked today. Used this recipe:

It looks nothing like the photo with the recipe, even tho I followed it to a tee, except for using dark brown sugar and half the amount of cranberries called for. A whole bag for a loaf seem like it would have been to much, and I was right. The batter is extremely thick and almost like concrete when spooning it into the loaf pan, so thick, the cranberries don't sink or move around at all. The result: It looks and tastes like it was made with ww flour, even tho I used AP white. It's also not very sweet overall, but husband says it's perfect and just what he had in mind when he requested it. Says it will taste good with cream cheese.

(22,767 posts)I have about half dozen recipes for cranberry bread saved and picked this one bc I didn't want to thaw out a can of OJ, as the others called for, for just a half a cup of juice for the recipe. I had planned on putting some orange extract in it, but forgot. Husband was a little disappointed until he ate a slice and said it was perfect as is and that he wouldn't have liked it the way it appears in the photo.

(38,593 posts)I ate w/ Dad tonight. There was a marinated pork tenderloin (sweet mustard and garlic marinade) and potatoes on the grill and steamed carrots.
special treat this time of year. Caramelized onion, mozzarella and goat cheese, fresh figs. Hot oven on a stone, top with torn prosciutto when it comes put of the oven and a good drizzle of balsamic reduction. Serve with a handful of undressed arugula.
