What ever veggies are starting to look soggy are sauteed in oil, then a quart of tomato juice is added.
Tonight veggies are, lots of onions, a carrot, zucchini, yellow squash, & few mushrooms, a drained can of black beans & I make my own sazon mix from here.

Ingredients
1 tbsp ground coriander
1 tbsp ground cumin
1 tbsp ground annatto seeds***I'm out of that.
1 tbsp garlic powder
2 tsp dried oregano
1 tsp onion powder

Boneless pork sirloin chops slow cooked in sauerkraut, pepper and garlic, with scalloped Granny Smith apples (cinnamon, nutmeg, cloves, butter and brown sugar), and roasted beets and turnips. Not a pretty plate, but def yummy.
