1. Mexican soup

1 can hominy, 1 of those small Goya seasoning packets, 1/4 lb chorizo, 1/4 cup thawed frozen corn, chopped onion, serano, garlic, cilantro and tomato. Topped with a sliced avocado.

4. Roasted Lemon Rosemary Chicken

Just about ready to pop into the oven. Also roasted potatoes and sautéed beet greens and spinach.

6. Asian stir fry

Thinly sliced strips of pork, garlic, onions, powdered ginger, bean sprouts and shiitake mushrooms fried in a large pan and served over rice noodles. The First Mate is bummed we don’t have oyster sauce but it doesn’t travel well on a boat.

Pelagic entered the northern end of the Chesapeake Bay this morning and we’re anchored for the night in a little bay on the eastern shore called Still Pond. So far, it’s lived up to its name! Tomorrow we’re heading to Annapolis for a few days.

Or, we just cleaned the fridge and this is what we found.

Leftover tamarind-glazed chicken and cauliflower from the other night, and a Greek salad. Lunch tomorrow continues the theme with leftover pizza and leftover ramen (not enough of each for lunch for two)
