Dessert: green grapes, plums, apple, and Brie. Cranberry-raisin crackers with mascarpone.

Ingredients
1 (3- to 4-pound ) beef pot roast, preferably a chuck roast
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided
1 large onion, halved, thinly sliced
3 cloves garlic, minced
1 teaspoon dried thyme leaves
2/3 cup strongly brewed black coffee
2 tablespoons flour
2 tablespoons cold water
Steps to Make It
Heat the oven to 325 F.
Sprinkle the chuck roast all over with the salt and pepper.
Heat the oil in a Dutch oven over medium-high heat.
Add the beef and sear, turning to brown all sides.
Remove to a plate and set aside.
Reduce the heat to medium and add the onions to the pan, along with the remaining 2 teaspoons of olive oil.
Cook, stirring frequently, until the onion begins to brown, about 7 to 9 minutes.
Add the minced garlic and thyme; cook, stirring, for 1 minute longer.
Stir in the coffee and bring to a simmer.
Put the beef back into the pot and turn to coat well with the onions and liquids.
Put the lid on the Dutch oven and transfer to the oven. Braise for about 2 hours, or until the beef is very tender.
Transfer the beef to a plate and keep warm.
Strain the liquids into a gravy separator and discard excess fat.
It's still cooking and smells wonderful.

***I sent the prep & cooking images to my sister & Mom. Sister mine reminded me I made a coffee crockpot chuck roast 35+ yrs ago. 🤣🤣🤣. I replied I won't be around in 35 yrs, to do this again.🤣😂🤣
I will not do this one again, the coffee powder I used to make the coffee made the gravy bitter, but the meat was tender.
Next time a Mississippi pot roast I think. Maybe.

(22,056 posts)Were stuck on a dock in Atlantic City until Wednesday or Thursday because of the remnants of Ian. Its been cold with tons of rain and high winds with gusts in the high 40s. Tough conditions for a sailboat!
Comfort food is in order. Pan fried Andouille sausage with mashed potatoes and gravy from the pan. The First Mate found some asparagus that she steamed. Weve got a couple of chocolate chip cookies left for dessert. Hot tea and brandy with a movie.
Tomorrow we have to refill our propane tank which fuels our stove. The tank is small at 11 pounds (gas grills usually have 20-25 lb. tanks) and its seems we get almost three weeks on a fill. We use a little in the mornings to make coffee and the occasional hot breakfast then a bit more for dinner. The stove also helps to warm the cabin!

(46,234 posts)$30 and six hours later, voila! Food fit for the gods. Tender meat. Tasty. Used Merlot 1993 and real beef broth. Nothing was spared.
Even ate it out of a French dish with wide noodles.
I never knew that beef stew could be a gourmet treat.
Find the cookbook to get the real recipe. I saw an equivalent online but even the ingredients are different, although not much. (Call me a purist.)
