or oat crumbs (in lieu of wheat).

You may have to do some trial and error, but there are definitely (at least there are gluten-free) oat products which will have the desired effect.

The brownies might be another place where you could substitute some oat flour.

6. One of my mom's favorite meals

I didn't realize it until very late in my mom's life, but she LOVED burgers. She passed away in 2020. It took me well past the new century to notice that she'd pick a burger over pretty much anything.
