Hi all. Wonder where Lucinda is, hope all is well.
I'm doing lemon baked chicken. Asian style spiced with rice on the side. Sliced oranges and peanut butter cookies for dessert.

(35,789 posts)I made tortellini salad from a recipe in "Eating Well" magazine. Here's a pic:
It was easy to make as we already had arugula pesto made. Added fresh broccoli, toasted pine nuts, lemon zest, and at my spouse's suggestion, red pepper slices. It would have been boring without the red pepper.

Do you make it the same way as you would a basil pesto? What else can you make pesto with?

(35,789 posts)I used pine nuts but you can also use walnuts.
You can do so many things with arugula pesto. I use it on crackers and put different toppings on it, like black olives. Sometimes I just cook up some ziti and toss it with that. It's good with grilled chicken.

(12,254 posts)tossed green salad with avocado, steamed potatoes. Blueberry tart I made free form this morning from leftover piecrust, leftover blueberries, a touch of vanilla sugar and a whisper of cornstarch. So good!

(9,992 posts)We had leftovers and I've been dong VERY boring cooking lately b/c it's hotter than nine hells and we have no AC, so minimal time in the kitchen is key. Most nights, I can't bear to even start before 8pm. Luckily, we are both nightowls so a 9pm dinner is okay.

(24,146 posts)we had leftover steak from sandwiches last night and some greens about to go. i made some croutons with the bread i baked this weekend, tossed it with red bell pepper, homemade vinaigrette and some local goat cheese.
i got a little heavy handed on the chipotle powder when i made the vinaigrette, so it had a bit of a kick. damn tasty salad.
