(5,309 posts)Chop em up with fresh basil and mint, then simmer it all day until it evaporates into the best tomato sauces. Freezes very well.
I haven't bought spaghetti sauce in years.
Yummy!
Nothing compares to a fresh tomato right out of the garden!

(16,926 posts)1 "Big-A$$" tomato with a slice out of the middle (the rest goes into puree) - a fresh Asiago bagel - a slice of Swiss - a garden leaf of Romaine - a shot of brown mustard, and a shake of garlic salt.

I also grow one called "Potato Top" - one I've never seen sold - found it from a garden writer in a Pittsburgh paper - also a monster that just SCREAMS of flavor. It got its name because the leaf looks more like a potato leaf than a tomato leaf.
Call it whatever - I call it fantastic!

(51,593 posts)You'd think that we would get the good stuff since so much is grown here. Everything lacks flavor compared to when I lived around Phila and the Jersey tomatoes were yummy as were the strawberries.

(74 posts)Pan fried some cubed eggplant- then sautéed our own cherry tomatoes with garlic - then threw in the cooked and browned eggplant cubes with the grated tomato / - served over pasta with fresh basil and grated cheese - a nice vegetarian recipe

(36,263 posts)I like to cut my tomatoes into big wedges, put the feta on the bottom, then tomatoes, then sprinkle with salt and oregano. Add cucumbers, then red onion, and toss to spread the salt around. Olives if you like. But let the salt, feta, and tomato juices stand for a while (at least 30 min, up to 2 hr) with occasional tossing and they form a creamy "sauce", no oil needed. Tomatoes should greatly outnumber cukes, IMHO, but there are as many variations on horiatiki as there are Greek chefs.

(4,392 posts)ripe Roma sauce for the freezer today and added some sweeter Millions cherry size - the simmering fills the air...
That photo makes my mouth water! Got a flatbread in the freezer, more cherry tomatoes and fresh basil from the garden, some dry salami and cheese in the fridge, olive oil and balsamic vinegar to dress it...deciding on dinner - yeah!
