What's for Dinner, Tues, Aug. 9, 2022

Swedish meatballs and egg noodles with fresh parsley and butter.

Meatballs are from the freezer. Because it's 93 here, I'm cooking the noodles in the microwave. I did a little searching and found these directions:

How to Make Noodles in the Microwave

Combine dry pasta and water in a microwave safe bowl and microwave on high for 5 minutes.
Remove and stir, add more water if needed, and microwave on high for another 5 minutes.
Remove, stir, microwave in 1 minute intervals until pasta is tender.

To make the sauce, I'm using beef stock, heavy cream, flour, soy sauce, chopped rosemary and freshly ground black pepper.

Cherry tomato salad with chopped basil and Caesar salad dressing. I'm adding more black pepper. I just picked the cherry tomatoes this morning.

Trilogy kombucha (kiwi, raspberry, and lemon juice; green and black tea).

Dessert: coconut fruit bar. Iced decaf coffee with half 'n half.

Barbacoa tacos on the menu as well as street corn -off the cob - the way I need to eat fresh corn.

didn't know what it was! Here, for anyone else who doesn't know:

Had some zucchini to use up and the recipe I use calls for 7-cups of shredded zucchini! It's a very yummy quiche.

with a mayo based dressing, chopped onion, green pepper, celery, and hard boiled eggs

Fresh tomato-cucumber-sweet onion-dill salad tossed with Italian dressing

I fixed celery sticks, sliced cucumbers and radish bites. Put together a meatloaf. Roasted a bunch of asparagus on a tray with fresh sweet onion slices, the last of the green onions, garlic, salt, pepper and olive oil.

Cut up a fresh peach for dessert, sprinkled with maple suagr and a dab of topping
