I used my Gram's peanut butter cookie recipe. I haven't made them in years, because no one else really likes peanut butter cookies. Gram's recipe makes 60+ cookies, and that's a lot to get through, although when Gram made them, we kids ate them as fast as they came out of the oven. I was telling my grandkids about the recipe and they were very interested. I decided to bake a half batch. Years ago, my older brother suggested making this recipe, and putting a Hershey's kiss on the top. That was good, but I always liked the plain cookie better. When I made this batch on Tuesday, I used Monk's Fruit sweetener for half the sugar. I divided the dough and made half of them plain, and then mixed some semi-sweet chocolate chips into the rest of the dough. When I put the cookies on the tray, I made them a little thicker than Gram did, so I got 17 instead of 30. They were a big hit. I told the kids they were from their Great great Grandma's recipe.
Gram's Peanut Butter Cookies Recipe
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup peanut butter
1 tsp vanilla
3 c. flour
2 tsps soda
1 tsp salt
Combine the dry ingredients in a small bowl and set aside. Cream the shortening and butter, then beat the eggs in, add peanut butter and vanilla. Mix in the dry ingredients. Roll into balls about 1 inch across, put them about 2" apart on the cookie sheet, then flatten with a fork dipped in granulated sugar. Bake at 350, center over, for 10-12 minutes, until set and bottoms are golden. Don't over bake. Cool on a rack. Store in a sealed container. Makes about 60 cookies.

I have taken ripe bananas and mashed them, then froze. The result has a texture like ice cream, and is very tasty. I went low carb almost 3 years ago, and went from eating a banana every day, to not having them at all. There are 3 cookies left, and yes, I have no bananas, so not this time, but maybe next time.

(16,959 posts)Vanilla, coco powder, semi sweet chips, even peanut butter. She really likes the versatality of frozen bananas and the healthy aspects. Both my kids and their families (for the most part) are vegetarian, low carb. We all come up with recipes that are staisfying and healthy.
I made frozen bananas pretty often a few yearas ago. One time, I had some ready for the kids and my young grandson asked me, "Did you make it because the banana was rotten?" lol

(16,959 posts)I think Gram's were better, but I enjoyed this batch. I gave the kids each 2 cookies, one plain, one with chips and told them they could have a taste test. They liked them both. lol

I tried this using homemade Nutella from a book "Make This, Buy That", which is very fun. They're crispier than pb cookies. Maybe it's my love of hazelnuts, but wow!
