Simple BBQ stuff. Cheeseburgers and hot dogs. Baked beans and sauerkraut. Chopped onions, slices of tomato and lettuce from the garden. Ketchup, mustards (3) and mayo. Toasted buns. Corona beers and iced tea. Klondike bars for dessert.

at any of the groceries around here for many months, except the Ore-Ida ones at the expensive grocery chain. Not sure why they're so scarce.

But I haven’t been able to find the Ore-Ida frozen O’Brien potatoes anywhere for months.
I have a casserole recipe that calls for them that my boys like.

Then we're having the last two fried boneless thighs leftover from last night. Husband will have his on a plate with french fries and I got more corn on the cob so we'll both have that. I'm going to put my chicken on wheat bread with extra sharp cheddar, lettuce, tomato and Miracle Whip.

Something that hit me last night when I was preparing the dredge: I thought, hmmm, rosemary sounds good. So I crushed up some dried rosemary leaves in my mortar and pestle and added that to my flour with the usual Lawry's Season Salt, black pepper and garlic. (I also add the same seasonings to my beaten egg for the dredge, too.) It smelled so good while it was frying and tasted really good, too. Seems like such a no-brainer, don't know why I didn't think to do it before yesterday.

The only other thing I've added to my dredge before was ingredients to make it spicy: cayenne and white pepper in the flour along with the Lawry's, etc and Franks Red Hot in the egg.

Maybe one of the best meals I've ever cooked in my life--all done on the grill.

Marinated pork tenderloin (the marinade was a sweet mustard and garlic marinade)
pouch potatoes
zucchini w/ mushrooms and onions

He has some chocolate chip cookies for dessert. I was too full for dessert.

Poor Al is stuck w/ leftover chicken parm from last night. lol

With white and sharp cheddar cheeses.

We have chili to go with or crawfish tails with bacon and tomatoes. To each their own.

Polenta turned out good.

I am gonna make another batch to refrig and make polenta fries next week. Have some more halibut cheeks…

with canned clams, red wine, garlic, pepper flakes, the last of the home-canned tomatoes (arghh) and 2 diced fresh romas, plus a little fresh basil from the garden.

It's time to hit the farmers' market for canning (roma) tomatoes. Geez - I always tell my husband that most household murders occur in canning season. "Gee, honey, when's supper? What have you been doing all day?" and the kitchen has a heat and humidity level that would put Sumatra to shame. Half-naked woman sweating like a river, visible steam from the stove, and a still half-full box of uncanned tomatoes. Temperature outside in the shade is high 90s.

No jury in the world would convict me. But in winter, every jar is like gold. Or, to use a southern expression, like ham in the fridge. You're prepared for anything.

At the start of the pandemic, with empty shelves and we were all supposed to stay on lockdown anyway, I knew I could keep us going for 6 weeks. At the end, we'd be eating tomatoes, beans, and frozen apples, but we'd be eating. I'm glad it didn't come to that.
