What's for Dinner, Wed., July 27, 2022

Eggplant-almond enchiladas. This is a favorite recipe of mine from Mollie Katzen. I'm using flour low-carb soft tortilla shells, though. Not really that crazy about corn tortillas.

You're familiar with Mollie, right? She's considered the mother of vegetarian cooking in America. I've been using her recipes all my adult life.

Mollie is also an opinionated liberal. She Tweets at https://twitter.com/MollieKatzen. Lately she's been sounding off about the SC decision.

I'll also make a tossed green salad to go with the enchiladas. I have a new container of spring mix to use.

Prol'ly no dessert 'cuz I'm lazy. Maybe some green grapes and iced decaf.

Dessert? Tired of chocolate ice cream. I think I'll be baking rice pudding soon.

Glistening brightly while slipping away from my spoon

A crispy cracker set nearby wails oh so silently as I snap it

Now into my pie hole you nasty tasting little beans of proteins

I try not to think of real meal food while walking off my beanies

One day soon (or in my next lifetime) I will be slender again (or not)

The First Mate is in the galley making Swiss cheese burgers with sautéed mushrooms and onions. Served on Portuguese rolls, the burgers will have the usuals on the side: Lettuce, red onion slices and beef steak tomato slices. She's also frying sweet potato fries.

Chocolate chip cookies, a bit of brandy and a movie for dessert.

Made the sauce homemade.
Haven’t cooked the rest yet as it is only 3:30pm in AK.

the kids brought me from Door County, and I also made brownies. So for dessert I'll have a brownie topped with cherries and maybe some whipped cream.

once had a run I drove every week one winter that took me up to Sturgeon Bay, etc etc. I always said I like to take a vacation in this area, but never did.

peppers...added blue cheese and dried cranberries...with gluten-free croutons...also low carb. Watermelon for dessert.

w/ curry as a main, but not indian curry, celery seed, tumeric, garlic, pepper. used to pasta, now i add soy sauce + over rice. my chicken ala what. + sweet corn.
