(146,218 posts)Found Chiarello's recipe and it is very similar to what I made last night, except he used much better tomatoes than I could get my hands on.
Sorry about the carbs. It just wouldn't be bread salad without the bread, lol.

Tonight I'll probably just rummage. I'm thinking there's some lasagna waiting in the freezer...

(22,340 posts)1 tsp each of the following:
rice vinegar
lemon juice
oil (I use flaxseed, but whatever your preference)
sugar (I use artificial sweetener)
Mix up. Then I add a chipotle puree that I make by just blending a can of the chipotle peppers in adobe sauce. I add 2 Tablespoons of puree but that's a pretty good heat level. Might want to start with just a couple teaspoons and see where you're at.
Then I just add half a bag of the coleslaw mix from the grocery store. Probably about 3 cups.
Mix it up and let it sit in the fridge for a bit if you have the time. I originally used this on tostadas, then as a filling in my bean burritos, and when I was getting my BBQ "rib" sandwich ready it just seemed like the right thing to put on it. And it was. And I do Weight Watchers and this is a very point friendly slaw. 1-2 points depending on how much chipotle you put in. And it makes a lot.

Tastes pretty good with cottage cheese

(29,098 posts)I made a veggie white lasagna and veggie enchiladas. I'm waiting for the two cheesecakes to cool so I can top them with ganache. I firmly believe in gilding the lily. My daughter is going away for the weekend and she needed food to take along so that's the reason for all the heavy casseroles. They are filling and easily portable.
Oh.....btw...I have come up with the most decadent, creamy cheesecake recipe ever....I'll try to remember to post it in the next few days....But you know me I'm not an exact cook so you'll need to be comfortable with general amounts and eyeballing...

(35,788 posts)I was going to have salmon on a cedar plank with salad and corn, but a friend offered me a couple nitrate-free hotdogs with a Hoegarten beer, so I decided to go with that.
Veggie chips, too. Yum. Casual, but good.

(51,907 posts)They cooked up a beer and cheese soup and added meat from 9 crabs. Yum! Also hamburgers, hot dogs, potato salad and strawberries fresh from the garden.

(9,791 posts)The pulled pork was very good and my special Granny's chicken thighs were a hit. The company and the food was enjoyed by all before the neighbor's huge fireworks display started.
