(32,102 posts)It uses canned salmon. There are other recipes on the Net that call for fresh salmon. But, I could never bring myself to use fresh salmon this way--except in the highly unlikely event I were to have a glut of it. I like this recipe a lot. I make it more frequently than I do regular salmon burgers. It's more of a breakfast sausage, given the spices, but good any time of day.
Low Fat Salmon Sausage Patties
Yield: 8 Patties
2 cans salmon (7 1/2 oz) or 1-15 oz can
1/2 c bread crumbs
2 egg whites
2 clvs garlic, minced
2 tbsp fresh parsley, finely chopped or 2 tsp dried parsley
1 tsp thyme
1 tsp sage
1/2 tsp marjoram
1/2 tsp salt
1/4 tsp fresh ground pepper
3/4 tsp crushed hot red pepper
Nonstick cooking spray
Combine all ingredients and form into 8 patties. "Fry" in a Teflon pan
coated with nonstick cooking spray until brown and crisp on both
sides, about 20 min. Add a little water during cooking if patties
begin to stick.

(32,102 posts)I made a sandwich with one of the pork chops I grilled on Saturday, and ate it along with the last of the grilled zucchini, which I ate cold. Yum!

It was all tasty and very filling! The icy cold applesauce hit the spot.
