We liked this simple formula:

Take three ingredients in equal amount: sea salt, ground black pepper and finely crushed fresh garlic.
Mix the three up into a paste.
Rub both sides of the steak with the paste until a layer sticks to both sides.
Grill until done as you like it.

If I still ate steak, I'd still be doing it that way.
