I have half of a leftover roast chicken - going to be a chicken salad with onion, celery, red pepper, water chestnuts, slivered almonds, and halved pitted sweet cherries in a dressing made of plain Greek yogurt, mayonnaise, garlic, and ginger with just a little dab of honey.

(20,176 posts)Make a crock of chili in the dutch oven on the grill-top outside (low and slow all day long) so it doesn't heat up the house.
Open a single-serve bag of Fritos. Put a scoop of chili inside. Top with cheese, sour cream, guac, lettuce, tomato, taco sauce, salsa, jalapeños or whatever else you want. Fold over the top of the bag so everything stays in and crunch/mix everything up with the free hand. Eat with a long fork out of the bag or pour it into a dish. The kitchen stays cool. Dinner is a nice combo of spicy and cool. The cool is refreshing. The spice causes increased sweating that cools you off. Eat it al fresco on the porch watching traffic, paired with a Tecate.
