mayo, and maybe grapes.

(12,132 posts)potato or egg salad...I never had that growing up and it was a surprise the first time she made me an egg salad sandwich but now it don;t feel right without 'em!
Also potato salad should have mustard in it. Everyone in here in my wife's family makes it without mustard and I have to add my own. AND they look at me like I'M the wrong one! Buncha non-mustard eating weirdos!

(42,001 posts)And hard boiled egg and mayo and celery seed and onion. I just had some with Ranch Dressing and it was good too.
I've also had Blue Cheese potato salad that was good.

(50,580 posts)I did a dinner for a bunch of people last year, and quite a few of them have medical problems that keep them from eating mayonnaise, salad dressing or other mayonnaise-y things. But we still wanted to have potato salad, so I used plain nonfat Greek yogurt instead. It turned out way better.

(53,112 posts)you can use mayo or a vinaigrette. I wouldn't put grapes in a potato salad. They are good in chicken salad though.

Seasonings: celery salt, seasoned pepper and sprinkle with paprika.
It's my mom's recipe and my favorite.

Red potatroes, I think was a touch of Ranch added to the mayo,
and bleu cheese crumbles. And bacon crumbles.
.
I should have started with the bacon crumbles, for that would
have been quite enough.

(8,747 posts)Never, ever would put grapes or ANY fruit in POTATO Salad.
IMLHO, Potato salad should have potatoes, eggs, mustard, celery, onion, pickles, pepper, dill, , and maybe a few other spices. No fruits of any type. You put fruit in in, then as far as I concerned it is a fruit salad.

French Potato Salad
1999, The Barefoot Contessa Cookbook
Serves: 4 to 6
1 pound small white boiling potatoes
1 pound small red boiling potatoes
2 tablespoons good dry white wine
2 tablespoons chicken stock
3 tablespoons Champagne vinegar
1/2 teaspoon Dijon mustard
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
10 tablespoons good olive oil
1/4 cup minced scallions (white and green parts)
2 tablespoons minced fresh dill
2 tablespoons minced flat-leaf parsley
2 tablespoons julienned fresh basil leaves
Drop the white and red potatoes into a large pot of boiling salted water and cook for 20 to 30 minutes, until they are just cooked through. Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes. As soon as you can handle them, cut in 1/2 (quarters if the potatoes are larger) and place in a medium bowl. Toss gently with the wine and chicken stock. Allow the liquids to soak into the warm potatoes before proceeding.
Combine the vinegar, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, parsley, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve warm or at room temperature.

For this recipe, it just so happened that I did grill the potatoes, but a review said they broiled them which seems fine to me if it's not a grilling day. It was absolutely fantastic. Couldn't stop eating it. I just love a vinaigrette with potato salad.

In regular potato salad, I agree with the poster nolabear who uses celery seed, and I use celery salt as well. They really add a depth of flavor the complements everything. I like the idea of Ranch dressing and someone's idea of adding some Old Bay, which actually has celerty salt/seed as the main ingredients (I just checked my box of it). Great idea!
For the traditional salad, I use the standards: mayo eggs, celery, red onion, pickles, black olives, pickle relish with a little of the juice or some vinegar, sometimes sweet relish, mustard in the mayoinaise mix. I also like to grate some carrot into it -- looks nice. My mom makes hers a lot like this Barefoot Contessa recipe but adds even extra veges like bell peppers and she uses buttermilk to make it a little creamy.

(22,845 posts)I mix it half and half with mayonnaise.
As an alternative, I highly recommend tossing the potatoes, etc., with olive oil, lemon juice and a dash of wine vinegar.

celery, red bell pepper, black olives, dill pickle relish with the juice, Vidalia onion, boiled eggs, marjoram, garlic, parsley, salt and pepper, Grey Poupon mustard and Duke's mayonnaise.
Sprinkle paprika over top when smoothed out and garnish with leaves from celery.

(118,880 posts)half mayo, half sour cream with a little sugar and lots of tarragon. My dad didn't like the grapes but loved the rest; celery, red potatoes, chives, chicken, red onion, kosher pickles, peas. I really liked it and with a slice of bread it was a full meal. The pickles really gave it a zing. Salt & pepper to taste. Will definitely make it again.

(28,352 posts)Didn't alter the flavor, but she said it added color to the salad.
I add:
Chopped hard cooked eggs
Chopped celery
Chopped onion
Chopped dill pickles,
Dash of dill weed
Chopped pimento
Bit of mustard
Dash of paprika
Mayo
To enhance the flavor of the potatoes, I boil them in salted water with an onion and garlic clove added. This is how I always start my potatoes, makes yummy mashed taters.
I love potato salad. I just fricking love potatoes!

(19,288 posts)Boiled the potatos and eggs. Some bake the spuds. She pealed and chopped them. She started her dressing in the bowl with a healthy dolop of mayo, (Best Foods for us), squirt of mustard, chopped onion, half a cap of vinegar, salt and pepper. She didn't add any extras. I like to add chopped dill pickle.
