(53,339 posts)It comes out better if you partially pre-cook the bacon, and it makes for a nice appetizer with the soy sauce and garlic nicely complementing the bacon.

8 ounces cream cheese, room temperature
2-3 teaspoons wasabi
1 lb shrimp, cooked
chopped scallion
1 (4 ounce) package rice crackers
1. Mix the cream cheese and wasabi into a paste-- I do this in a food processor (I add quite a bit more wasabi too cuz I love that stuff).
2. Spread a bit of the cream cheese mixture on a rice cracker.
3. Top with one shrimp and garnish the top with a little chopped scallion.
Goat cheese and Edamame
8 ounces shelled frozen edamame (about 1 3/4 cups)
24 rice crackers,
5 ounces chevre cheese (fresh goat cheese)
3 scallions, very thinly sliced
hot chili oil
1. Cook edamame in boiling water according to package directions.
2. Drain beans in a colander and run cold water over them to cool.
3. Drain well and sprinkle with salt.
4. On top of each cracker, spread about 1/2 teaspoon of goat cheese, and then top with 3 to 5 edamame, a pinch of sliced scallions, and a few drops of Chile oil. Serve.
Can you tell I like scallions?!

(47,675 posts)Get some sharp cheddar, havarti, pepper jack, swiss, wine-infused cheddar, huntsman, gorgonzola, edam, or whatever else will cube nicely. Grapes are a good addition to the tray since they don't brown like apples and go well with pretty much any kind of cheese.
