The French, Swiss, Belgians, et al will visit the boulangerie daily, but they have all sorts of ways of using the previous day's loaf if it's left over.

(36,818 posts)It's easier if you have a covered 4 qt polycarbonate tub for fermentation and a proofing basket, but his recipe describes a method that requires neither of those things. All you really need is a cast iron dutch oven or some other heavy covered pot about the same size.

(1,160 posts)Gods, I love pumpernickel. When toasted and crunchy...so good. With a bit of olive margarine and a dash of honey...yeah..Pretty much makes my morning.
I make a lot of soup. It's easy and gets rid of stuff that might be lingering in my fridge. A bowl of soup by itself is okay, but some pumpernickel makes it so much the better.

(9,580 posts)actually makes a pretty good pumpernickel. Love it toasted with liverwurst or limburger, or with an egg on top for breakfast. Or butter and sliced tomatoes, or grilled cheese, or ... I could go on and on.
