Fried Scrapple - Delectable or Detestable

A recent discussion on fried mush got me thinking.



I make my scrapple at home from scratch. A few pieces fried along with the mush, an egg, and a buttered biscuit is hard to beat.

Its whats for breakfast tomorrow morning.

Scrapple is ground up pork parts, spices and cornmeal thats boiled and poured into molds to chill and harden. Its sliced and fried. I make mine from home made pork sausage with lots of sage.

Mush is the same without the pork and less spices. In my opinion its best fried together with the scrapple providing the grease.

Great when served with an over easy egg, biscuits and black coffee.

When I worked in PA - I always made sure to fill up a cooler with the local "good stuff" to bring home and share with my PA expats.

Its better if you use about half again as much sausage and chop it finer in a food processor. Also a bit more sage.

I make a bunch and vac pack it for use later.

Its cheap eats, some recipes are made from leftovers or cheap cuts of pork, some call for organ meats, but I skip those. I like lots of little tasty bits (try Apple Scrapple!), onions or veggies, and the more spices the better.

White pudding. Ranks up there with eating heated fat

I've also made goetta, which is its cousin, except it uses oats instead of cornmeal.
