French fries or steak fries?

Last week, The Takeout ran a story about Dunkin’ Donuts testing out a product called Donut Fries, wherein I spent a few hundred words spittin’ hot takes about the gratuitous use of “fries” to describe any food that’s stick-shaped (chicken fries, apple fries, pork fries, calamari fries etc.). Somewhere in the story, I made some off-hand remark about how steak fries suck—those letters flowed through my fingers without a second thought—and oh boy, did I misjudge the intensity of the pro-steak fries camp in the comment section.

I still maintain that steak fries reside in a lower caste of French fry-dom, but I’m open to having my opinions swayed. In the interest of diplomacy, I’ve invited my colleague Gwen Ihnat to defend the steak fry and tell me why I’m wrong (except I’m not).

I brought this to the attention of some friends of mine and got shamed because before even judging anything here they judged me for using a fork with (restaurant) fries.

that both steak fries and regular fries are good IF COOKED PROPERLY.

It is essential both have crispy outsides and fluffy middles. Nothing worse than a pale, raw fry that's hard in the middle, or a limp, undercooked, greasy, one. That goes for all types.

I like skins on my fries, but I understand that is a matter of taste.

"Shoestring fries" are wonderful, again, if cooked properly!

And, I know I'll take some grief, here, but I never dip a fry in ketchup. I loathe ketchup, period. Cheese fries or chili cheese fries, yes. Chili cheese fries usually have to be eaten with a fork.

That's my two cents.

The worst is when you're cooking for your family and everyone likes them different ways - but not the way you like. You never get what you want as the cook!

A nice tartar sauce works. Ketchup is too sweet and over powering. Aioli can be good too....

However, a really good thin fry, like a Belgian frites style, can be better. Usually those are not cooked correctly, though. People overcook and over salt them.

Hearty steak fries with a steak, or chops, or even with grilled portabello slices - slim n salty french fries with burgers, club sandwiches.
