Tonight's dinner...slow cooked Mexican spiced chicken thighs shredded and used in wraps or a rice bowl with cheddar, avocado, sauteed onions and peppers, steamed corn, shredded red cabbage and lime juice.
I've taken my love of cooking to our daughter's home in Olalla WA...what fun!

(4,238 posts)I do love cooking and hosting for the holidays, but the menu looks deceptively difficult. The sausages, ham, and cheese spread required minimal effort. I prepared the mushroom strata and bread pudding the night before and just baked them in the morning, along with the eggs in tomatoes.

Today I'm making a rib roast, but I think I'm getting it in kind of late since I just now decided to do it low and slow, lol. Oh well, it should be okay. Left the baking potatoes in too long because they were so huge, so I got the roast in late (very distracted today). I'm going to make stuffed potatoes with chives out of the baked potatoes.

This morning, I made Eggnog French Toast with an Apple and cranberry compote and had some leftover ham on the side.
Some of these recipes I've used for a few years and loved them. But next year, I think we'll go back to a seafood Christmas Eve theme that we did for a few years. The fridge gets too crowded and at Costco, I kept seeing the beautiful seafood and decided to go back to that. Probably a tenderloin roast next year instead of prime rib, we'll see.

(9,581 posts)What's a big dinner without a few ... fuck ups? haha! Mine was transferring my cheese cake batter to a big pot I have that USED to be Teflon 'cause I didn't have a big bowl. Then I noticed tiny flecks of black in the batter - metal, oh great, everyone will get cancer! So I did the brownies as a backup, but everyone still ate the cheesecake. WTF, I'm 70, I'll eat all the Teflon I want. haha
You sound like quite the cook.

(269,237 posts)There were three of us who used to hang out from campus day. I used to visit my Miami sister every Christmas when their boys were young and at home. The other friends would have Christmas dinner with the living mother. Then our beloved friend died of liver cancer with very short notice. So I started having Christmas dinner in JA. My good friend does not eat chicken so I decided to stuff yellow tail snapper for her, but it soon became the favorite dish on the menu. The red snapper folks asked why I only did yellow tail so now we have half and half.
Most of the rest is pretty standard Caribbean Christmas dinner. We had a blast.

Today, hubs and I made rib eye steaks on the grill. Brrrrr, it was cold outside but I want to do this again. Plain baked sweet potatoes and southwestern veggies on the side. Pie for dessert but no room for that today, maybe tomorrow.

(21,675 posts)His son's mother was being an asshole about today (nothing new), so we had to move it up. We had a rib roast, roasted smashed fingerling potatoes, veggies with bearnaise sauce, and a blueberry pie. Yummy!

Dumped on a newspaper covered table, and served with sweet tea.
Kinda goes with your picnic theme...

(14,276 posts)Yesterday we cooked a chicken in a pressure cooker, prepped a green bean casserole, and then had vegetables (potatoes, celery, carrots, cauliflower) in a crock pot. When we sat down for dinner last night the vegetables were still uncooked. So today we mixed that with the leftover chicken and some broth for a great soup.
It's just my wife and me - so it's all good.

Pineapple Pretzel Salad
1 Cup coarsley ground pretzels
1 stick butter - softened
1/3 Cup sugar
8 oz. cream cheese
1/2 Cup sugar
1 - 20 oz. can crushed pineapple - drained
8 oz. Cool Whip
Crush or use food chopper to coarsley grind pretzels. Mix together with the butter and sugar and spread on a cookie sheet. Bake at 400 degrees until brown - approx. 6 minutes. Cool slightlly and break into pieces. Refrigerate.
Mix cream cheese and sugar until well blended. Stir in drained pineapple. Gently stir in Cool Whip. Stir in pretzels just before serving.
This recipe makes a smallish amount - for family gatherings I double the recipe.

(9,581 posts)Several years ago the geese at Publix in Atlanta were $60.00+ but I guess that's no more expensive than a large rib roast, may even be cheaper. Guess it depends on your perspective and pocketbook! YMMV

For supper I just had some Club crackers with American cheese with another Coke. For dessert I ate some homemade cookies and fudge my neighbor brought over. (Too much sugar, but hey it's a holiday.)

Nearly every adult who came brought one or two dishes to contribute.
Oh - I took allergen free oatmeal cookies - gluten, soy dairy, nut free. Our niece is allergic to dairy and her sons are allergic to the other things. So I did a lot of research and made them cookies that their family could eat since they can eat few of the traditional desserts. Even the people without allergies loved the cookies!

We had a Broccoli slaw salad, with red onion, diced cucumber, baby bell peppers dressed with a Poppyseed/caesar dressing
Roast Fall Veggies-Fresh Brussell sprouts, Brown mushrooms, carrots, parsnip, tri-colored bell peppers, zucchini & yellow squash
Fresh green beans, with mushrooms & peppered bacon in a chicken broth base
Broasted Chcken wings, I TIRED AS HELL of turkey), brined for 2 days with an herbal blend of garlic, Tarragon, fresh white sage, Russian cilantro & a few others from my kitchen garden, thinly sliced lemon mixed with organic butter & local olive oil.
Leg of lamb, also brined for a few days then slow roasted with fresh rosemary, garlic, Greek Oregano, Fresh cracked pepper, Purple Shallots, 2 bulbs of garlic, carrots, onion, thyme & worcestershire sauce. I used the drippings to make a "gravy", thickened with cornstarch & finished with a dark red wine.
Steamed white rice.
Fresh Homemade Parkerhouse/Brioche hybrid rolls.
Dessert:
Fresh homemade blueberry filling pie made with a butter pie crust, flavored with Meyer Lemon Zest & True Cinnamon

(17,651 posts)..and my new Scottish son in law contributed haggis and black pudding. Of course after everyone asked for it no one ate it and we only got about 6 ribs to bring home for left overs ( along with the haggis and blood pudding..which actually wasn't too bad).
I also made the recipe featured in the latest Farmers Almanac for sweet potato casserole no churn ice cream. It was great!

(146,339 posts)I roasted a Turkey breast, and made garlic mashed potatoes and brussels sprouts with a lemon butter sauce. Gravy and whole berry cranberry sauce on the side. We shared some of the turkey with our dogs, who were at full attention near the table in the dining room.

Now preparing for Thanksgiving Part II tomorrow evening. DH got a free turkey from work. My son is now on a plane from Florida with his new girlfriend headed home for a week. He bragged to her how good my Thx meal is so I have to recreate it again including the PA Dutch bread-potato filling. And her parents are coming too. Her Dad is a Trumper. DH and I are pretty good at changing the subject.

(407 posts)I made my first Beef Wellington and although it wasn't wrapped well, it was divine! And medium rare!

(407 posts)It was very time consuming, however it wasn't difficult until the assembly. You make a square of procuissto and put the duxelle on it, then wrap the beef with plastic wrap with the square.
Yeah, sounds easy! But no! Mushrooms everywhere, the puff pastry barely fit around the whole thing! It was 2 1/2 lbs so it turned out HUGE. Delicious! I think it would be easier to make individual portions.
